A single hill. A single varietal. A single uncompromising standard. High Hill produces fewer than four thousand bottles a year, biodynamic, hand-tended, ungraded.
High Hill stands at one hundred and eighty metres above the valley floor, a long ridge of chalk and clay that catches the southern light from sunrise to dusk. Cool nights, long ripening, fine acidity. Nothing more is required.
We farm by Steiner's calendar, ferment with native yeasts, age in old French oak, and bottle without filtration. The wine reveals the land. We try not to be in the way.
Four wines, released once a year. Allocated to members first.
Three private retreats on the estate. Each comes with a private tasting and breakfast from the kitchen garden.
